Ripe Shiraz juice is run off skins after crushing. After a partial fermentation, the juice is fortified with a neutral grape spirit to bring the alcohol content to 17%. The wine is racked into old hogshead oak and left quietly to mature for about 3 years. A blend is then created from several batches, then returned to oak for further ageing for up to 5 years. Known widely as Mataro or Mourvedre, the grape is renowned for its spicy aromatic notes, savoury structure in combination with delicious juicy fruits. Sourced from the Ferguson Valley, we harvested cold and threw in some whole bunches for good measure. The result is an extra dimension of charm to the wine. Fermented cool on skins for up to 10 days before direct draining to oak express, and then retained in barrel for 12 months.
